Seth Dunne brings over twenty years of extensive restaurant industry experience to his role as general manager of The Copper Grouse. A native of the northeast and local expert, Dunne previously spent thirteen years living and working in Manchester, and returned to Vermont from New Hampshire. At The Copper Grouse, Dunne’s impressive and well-rounded background comes through in the restaurant’s friendly and professional service, creating a welcoming environment for the community’s loyal locals and transient guests.
Dunne began his hospitality career underwater as a mess specialist for the United States Navy, directing all aspects of ordering, inventory, food preparation and food safety for kitchen operations on board the U.S.S. Bergal Nuclear Submarine.
Following his time in the Navy, Dunne moved to the northeast and soon after became assistant manager at Sirloin Saloon in Manchester, VT, where he quickly rose to general manager. After more than 10 years at the Sirloin Saloon, Dunne left to take on the role of general manager at the Nine Nine Restaurant and Pub in Rutland, VT and in 2014, he moved on to become the food & beverage director at the historic Exeter Inn in New Hampshire. During his tenure at the Exeter Inn, he oversaw the hotel’s Epoch Restaurant and Bar as well as banquet events and in-room dining operations, perfectly preparing him for his new role as general manager at The Copper Grouse.
