The Copper Grouse team serves up inventive takes on tavern fare with soulful dishes like cheddar ale soup, cider-brined chicken and maple crème brulee, all crafted from the local, seasonal ingredients that celebrate the diversity of his Vermont’s bounty. Neighboring farms and purveyors enrich our menu with products like Grafton Village Cave-Aged Cheddar, Champlain Orchards Baldwin Apples, and Whistle Pig Rye Whiskey.
