At The Copper Grouse, our kitchen celebrates the distinct bounty of Vermont and the wider New England region. We believe that extraordinary meals begin long before the plate — with farmers working the land, maple groves in sugar-season, micro-greens harvested fresh, and fish landed nearby. 

That’s why we partner closely with a curated network of small farms and specialty purveyors–many located just a short drive from Manchester Village. The result: dishes rooted in place, season and purpose.

Based in Proctorsville, VT and in operation since 1992, this house-made pasta producer supplies fresh ravioli, sauces and specialty pastas that we incorporate into seasonal dishes and chef specials.
